Murphy approved Sweet potato pancakes

4 cups cooked sweet potato or pumpkin would work

1 cup apple sauce

1 tbsp vanilla

1 tsp pumpkin pie spice or mixture of cinnamon, ginger, allspice

2 scoops Mysmartshake(USANA)  protein powder

3 eggs

2 tbsp ground flax seeds or chia seeds or a mixture of both

1 tbsp maple syrup or other sweetener

Blend all ingredients in a blender

All coconut oil to a griddle or fry pan

Pour a small amount of batter out for each pancake. They are tricky to flip so make sure they are cooked well before flipping.

Add maple syrup on top when cooked.
