Potato leek coconut milk soup

4 potatoes
3 leeks
1 large onion
1 small sweet potato
2 stalks celery
2 cloves garlic
1 tsp rosemary
1/2 tsp smokey paprika
salt and pepper
I added a hand
coconut oil

saute all veggies in 2 tbsp coconut oil until tender. Add 1 tetra ( 1 litre) chicken stock or veggie stock. I like Imagine Organic brand. Stir in 1 can of coconut milk at the end. Make sure coconut milk is organic or does not contain sulphites.
Put in blender and puree until desired texture.
