Vegetarian lasagna

 

I love this recipe. I wanted to create one that had the ricotta cheese taste and texture to it without using cheese.

I have loved the versatility of cauliflower and thought I would give it a try. It was amazing. Hope you enjoy it as much as our family does.

preheat oven to 350 degrees

9 or 12 brown rice lasagna noodles (or kamut or spelt)

2 jars organic spaghetti sauce  ( we love Simple Natural tomato basil or for spicy PC organic Arabiatta, or do one jar of each)  or 1 jar sauce and 1 can tomatoes ( make sure to look for BPA cans)

1 large pepper

1 small onion

1 cup mushrooms

1 tbsp avocado oil (handles the heat well)

2 tbsp nutritional yeast

1 cup cashews

1 egg

2 large garlic cloves

1 large cauliflower head

Cook lasagna noodles according to directions. You can get lasagna noodles that are oven ready. But you may need more sauce

saute the pepper, onion, mushrooms and garlic in pan with avocado oil. You can drizzle on balsamic vinegar as well.

Cook cauliflower. There are several different ways I have cooked it. Baked in oven at 350 for approx 30 mins in a roasting pan with a little water in the bottom. Steam it in a steam basket on the stove, or I have done it in the crock pot. Put in crock pot with a little water (about 1/2 inch) and cook on low for a few hours. You can leave on during the day if you are working.

When cooked put in food processor with the cashews, nutritional yeast and egg. Blend until smooth.

In a 9 by 13 casserole dish put a small amount of sauce on the bottom. Put 3 lasagna noodles on top. spread the cauliflower mixture on the noodles, on top add the sauteed veggies. 1/2 if you are using 9 noodles 1/3 if using 12. Pour a small amount of sauce on top. repeat the layers. On the top layer pour the remaining sauce and crumble goats feta on top as well as additional nutritional yeast (approx 2 tbsp).

Put in oven for approx 30 minutes or until browned and bubbly.

Let sit for approx 10 mins before cutting.

Extra tips: The Simple Natural sauce can be purchased a Cosco. 4 jars for around $10. The PC Arabiatta sauce I often times get points off because I buy it often with my PC points card.
