This is so creamy and delicious. Because of the high fat it is also very filling.
1 tbsp coconut oil
4 cups of mushrooms
2 stalks celery
1 cup parsely
1 large potato
2 large garlic cloves
salt and pepper
Saute all of the above until tender.
Add 1 litre vegetable broth or chicken broth
Add 2 cans organic coconut milk or 1 litre from tetra.
Take batches and blend in a blender. You can leave some chunks of mushrooms or potatoes.
