Broccoli cauliflower cream soup

This soup is so delicious and so healthy and easy.

I have been buying frozen organic veggies more often. I often look at the organic veggies in the produce section and wonder how long they have been sitting there.

I have also enjoyed getting my PC points on things I buy the most, like frozen veggies.


1 large onion

2 stalks celery

2 cloves garlic (or more depending on our taste )

2 cups frozen broccoli and 2 cups frozen cauliflower.

1 large sweet potato cut into cubes

1 cup frozen squash

1 or 2 large carrots chopped

500 ml coconut milk

500 ml chicken broth

Smoked paprika, ginger and turmeric ground or fresh. If fresh I use 1/2 inch chunk of each or ginger and turmeric.

Fry onions and garlic then add frozen veggies and sweet potato coat with seasonings. add coconut milk and chicken broth. You could use vegetable stock if want vegetarian, and gently heat.

Use the same base and change up the veggies to whatever you would like. Mushrooms, asparagus, etc. 

Put in Vitamix and blend until desired consistency.

My husband loves it smooth my son likes it chunky. Hard to please everyone.!!!
