Coconut Lemon pudding

1/2 cup coconut sugar

3 tbsp oat flour

1 tbsp lemon zest

1 can full fat coconut milk

1/2 sugar free soy milk

3 large egg yolks

2 tbsp butter

1/2 tsp vanilla extract

2 tbsp fresh lemon juice

Mix flour, lemon zest and sugar together in a sauce pan. Slowly add rest of ingredients. Stir until thick.

Add 1 tbsp chia seeds.

Let chill in fridge for a few hours or overnight until thick.

I love to eat with pomegrante seeds or frozen fruit.
