Kale Salad

  • One large bunch of Kale(organic if possible).
  • 1 large avocado
  • 1/2 cup raw cashews
  • 1 large date
  • 1/4 olive oil or avocado oil
  • 1/4  sea salt

Tear kale away from the entire stem. Tear into small pieces. Rub all of the kale with the oil using your hands. sprinkle on salt. Let sit.

Put Cashews and date in a food processor and pour in enough water just to cover. blend until smooth.

Peel and mash the avocado. Using your hands rub the avocado on the kale leaves. Then pour the cashew mixture onto salad and toss until leaves are coated. You can sprinkle on sunflower seeds, sesame seeds or hemp hearts, if you desire.
